                    TÓM LƯỢC
 Với mục tiêu tìm loại hóa chất thích hợp để đảm bảo chất lượng sản phẩm táo tươi ăn liền qua thời gian bảo quản. Để tăng tính tiện lợi cho người tiêu dụng cũng như góp phần đa dạng hóa sản phẩm. Đề tài nghiên cứu: “Khảo sát ảnh hưởng của quá trình xử lý đến chất lượng sản phẩm táo tươi cắt miếng” được tiến hành khảo sát qua các thí nghiệm sau:
 Thí nghiệm 1: Khảo sát ảnh hưởng nồng độ NaHSO3 (20, 40, 60, 80, 100ppm) đến màu sắc, tổng VKHK và độ giảm khối lượng để xác định nồng độ thích hợp cho việc xử lý táo. Kết quả cho thấy NaHSO3 80ppm cho sản phẩm táo có màu sắc và giá trị cảm quan tốt cũng như bảo đảm an toàn vi sinh.
 Thí nghiệm 2: Khảo sát ảnh hưởng của nồng độ acid ascorbic (1, 2, 3, 4%) đối với màu sắc và sự hao hụt khối lượng nhằm chọn nồng độ thích hợp cho quá trình xử lý. Kết quả qua 8 ngày bảo quản táo được xử lý bằng acid ascorbic 4% cho giá trị cảm quan tốt không khác biệt nhiều so với mẫu ban đầu.
 Thí nghiệm 3: So sánh hiệu quả sử dụng của NaCl, acid citric, acid ascorbic, NaHSO3 đến mật số TVKHK và khả năng bảo quản. Qua quá trình thí nghiệm thu được kết quả như sau: táo xử lý bằng dung dịch NaHSO3 80ppm được chọn với các tiêu chí đảm bảo chất lượng, an toàn, cảm quan tốt và tính kinh tế cao.
 Thí nghiệm 4: Khảo sát ảnh hưởng của số lần sử dụng dung dịch NaHSO3, để tận dụng dung dịch rửa và tăng tính kinh tế. Kết quả cho thấy, sau khi dung dịch được sử dụng xử lý táo đến lần thứ 5 vẫn cho chất lượng sản phẩm tốt.
